Celiac disease is an autoimmune disorder. When someone with celiac eats gluten, their immune system attacks their own small intestine. Even a crumb can cause damage.
Non-celiac gluten sensitivity (NCGS) produces similar symptoms — bloating, brain fog, fatigue — but without intestinal damage.
